Soshi Ueno
After working in restaurants and hotels in Japan, moved to Europe in 2002.
He trained in Paris, the home of French cuisine, and worked at restaurants such as the ''Restaurant Ambassador'' at the 5-star Hotel de Crillon.
He returned to Japan in 2007 and served as sous chef at Beige Alain Ducasse Tokyo, and in 2012 as executive chef at Le Comptoir Benoit Osaka.
In 2015, he opened "Le Signe" as the main dining room at the former Karuizawa Hotel, and in 2017 he became the executive chef who oversees the restaurants of the entire hotel group.
In 2019, he opened "Le Signe" and in July 2023, he moved to Ginza 6-chome and opened "Ginza Restaurant Destina".
A sophisticated dish born from the mastery of production, distribution, service, presentation, and perfected cooking techniques, with a history of seriously considering carefully selected ingredients from around the world.
Identifying the essence of ingredients and cooking them using the best methods.
